A creative but simple way to make a tasty lunch or dinner in the wilderness.

Nothing is better than simple and tasty food in the wilderness. You can make this course at home or outdoors, and you can eat it for lunch or dinner. The meal is inspired from the Italian kitchen, but you make it like a Mexican quesadilla.

Ingredients for 2 people:

2 chicken filets

6 small tortillas

1 glass with pesto

2 spring onions

0,7 L grated mozzarella cheese

1 Half red pepper

15 cherry tomatoes

Olive oil

Salt and pepper.

Coriander

Step-by-step instructions:

  • Make the salsa by cutting red pepper and cherry tomatoes into small pieces. Pour over some olive oil so you get a juicy salsa mix. Taste with salt, pepper and coriander.
  • Cut the chicken filet into small slices / pieces. Have pepper on and cook it fast on high temperature in a frying pan.
  • Put pesto on a half tortilla. Put some chicken over the pesto, and then have cheese over the chicken. Then you turn the empty side on the tortilla over the other half in to a quesadilla shape. Put it in the frying pan and start cooking. Turn after about 2 minutes.
  • Cut the spring onion. Take the quesadilla on a plate, and put some spring onion over the quesadilla. Put also some salsa on.

Hot tip: You can swtich out the tomato salsa with guacamole or pickled onions.
